This breakfast casserole is made about every other month, we all really enjoy it!
Breakfast Casserole
6 eggs
about 3/4 cup milk
4 large sausage links (or about 1/2 lb ground sausage)
2 russet potatoes
about 1 teaspoon salt
about 3/4 teaspoon pepper
about 1/2 teaspoon paprika
cheese (if desired)
1. Peel, chop and boil your potatoes until just soft. Not quite to the point you'd make mashed potatoes with.
2. Cook your sausage fully. Any meat would work! (Or what we do now is no meat at all!!)
3. Chop up your potatoes and sausage into bite sized pieces. I did the first three steps the night before.
4. Preheat the oven to 375 degrees. Crack and mix your eggs, milk, and seasonings. Then add your potatoes and sausage. Stir till combined and pour into a 9x9 baking pan.
5. Depending on your oven, cook for 30-45 minutes until cooked through. Mine took about 40 minutes. If desired, melt cheese on top (I didn't, but after eating it-cheese would have upped the awesomeness in my opinion).
6. Serve and enjoy!
